Title: Creole Zucchini

Yield: 6 Servings

2mdZucchini oryellow squash cut in 1/2-inch rounds
3mdTomatoes; sliced; or
1lbTomatoes, canned; sliced
2 Onions, sweet; sliced in rings
2 Green peppers; sliced in rings
1tsBasil
1/2tsOregano
1/4cOlive oil
1/4cSoy sauce

Saute onions and peppers in oil until tender. In casserole dish, layer squash circles, onions and peppers, and tomatoes. Sprinkle herbs and soy sauce on each layer. Bake at 350 degrees for 30 minutes or until vegetables are tender.
